  9.         Mashed Potato Candy is simple to make.  This recipe is a family
  10. christmas tradition.  It is VERY sweet.

  12. 1/2 cup mashed potatoes
  13. approximately 2 pounds powdered sugar
  14. peanut butter, your choice chuncky or creamy
  15.         Mix mashed potato and 2 cups powdered sugar in good sized mixing
  16. bowl. Potatoes will become watery at first.  Continue adding powdered sugar
  17. until mixture is thick enough to roll. It may not take all the sugar, or
  18. it may take more, humidity will cause amounts to vary.
  19.         Sprinkle powdered sugar on pastry sheet.  Take a portion of the
  20. potato mixture and roll it out using  a powdered sugar coated rolling pin.
  21. When mixture is about 1/4 inch thick spread a layer of peanut butter over
  22. the potato mixture.  Starting on the longest side, roll the dough up into
  23. a tight roll.  Slice the  roll into pieces about 1/2 inch thick.
  24.         Candy can be stored in a covered container.
